American Pistachio Bran Muffins

48 (2.75 in.) muffins.

1 pound Granulated sugar
1/2 pound Shortening
1/2 ounce Salt
9 Eggs, large
24 ounces Milk
8 ounces Unprocessed, miller's bran
1 pound Coarsely chopped, natural American pistachios
4 ounces Honey
4 ounces Molasses
1 1/2 pounds Flour
1 1/2 ounces Baking powder


Cream sugar, shortening and salt. Add eggs, one at a time; beat until smooth. Stir in milk, bran, pistachios, honey and molasses. Stir in flour and baking powder, just until blended. Portion with #20 (1/4 cup) scoop into 48 paper-lined muffin tin cups. Bake at 400°F., 12 to 15 minutes, or until pick inserted into centers comes out clean.
