Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1/3 cup Sugar
1 teaspoon Ground cinnamon
6 cups Unpeeled baking apples, sliced
3 tablespoons Lemon juice
3/4 cup Each flour and rolled oats
1/2 cup Packed brown sugar
1/3 cup Coarsely chopped, natural American pistachios
1/2 cup Butter or margarine, melted
Combine sugar and cinnamon; toss with apples. Place in 2-quart shallow baking pan; sprinkle with lemon juice. Combine flour, oats, brown sugar and pistachios. Stir in melted butter; mix thoroughly. Sprinkle topping over apples. Bake at 350°F., 40 - 50 minutes or until apples are tender and topping is crisp.
