Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
1 cup Half and half
¼ cup Sugar
5 teaspoons Cornstarch
1 Egg, beaten
1 teaspoon Grated lime peel
½ teaspoon Vanilla
¾ cup Chopped natural American pistachios, divided
Angel food cake, split into 3 layers
1 cup Sweetened whipped cream or topping
Combine half and half, sugar and cornstarch in 1 quart microwave safe mixing bowl. Microcook at HIGH (100 %) 4 minutes, stirring halfway through cooking time. Stir small amount of hot mixture into egg; return to hot mixture and mix well. Micro-cook at HIGH 1 to 1 ½ minutes or until thickened. Stir in peel and vanilla. Cool angel food cake. Spread whipped cream over top layer of cake; sprinkle with remaining pistachios.
