Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
¾ pound Poached Alaska halibut
8 ounces (1 package) Neufchatel cheese, softened
4 teaspoons Lemon juice
2 teaspoons Onion juice
¼ teaspoon Tarragon, crushed
1/8 teaspoon White pepper
3 tablespoons Natural American pistachios, chopped
Dash cayenne pepper
Break poached halibut into chunks; remove bones and skin. Combine halibut, cheese, lemon juice, onion juice and seasonings in food processor or electric mixer; blend thoroughly. Press into 3-quart mold or bowl lined with plastic wrap. Refrigerate several hours or overnight. Unmold onto serving platter; sprinkle with pistachios.
