American Pistachio-Cheese Wafers

Approximately 2-1/2 dozen.

1 cup Sharp Cheddar cheese, shredded
3 tablespoons Butter or margarine, softened
1/8 teaspoon Hot pepper sauce
1/2 cup Flour
1/4 teaspoon Each baking powder and paprika
1/8 teaspoon Salt
1/3 cup Chopped American pistachios, divided


Beat together cheese, butter, and hot pepper sauce. Combine flour, baking powder, paprika, and salt. Add to cheese mixture with 2 tablespoons pistachios; mix until well blended. Shape into a log about 7 inches long; roll in remaining pistachios, pressing into dough. Wrap in plastic wrap and refrigerate at least 2 hours. Cut into 1/4-inch slices. Bake at 400°F. about 8 minutes or until edges are lightly browned.
