Pistachio Ice Cream Sauce

3/4 cup.

¼ cup Butter or margarine
½ cup Orange juice
3 tablespoons Packed brown sugar
1 teaspoon Grated orange peel
1 teaspoon Cornstarch
2/3 cup Natural American pistachios, chopped and divided


Microwave Method: Melt butter in 2 cup microwave safe glass measure at HIGH (100%) 30 to 45 seconds. Stir in orange juice, sugar, orange peel and cornstarch until blended. Micro-cook at HIGH 2 to 2 ½ minutes or until thickened. Stir in ½ cup pistachios, microcook at HIGH 30 to 45 seconds or until thoroughly heated. Pool in bottom of serving dish; top with ice cream and sprinkle with remaining pistachios.
