American Pistachio Rice With Curried Lentils

4 to 6 servings.

1 cup Chopped onion
½ cup each Chopped carrot and celery
2 tablespoons Vegetable oil
2 to 3 teaspoons Curry powder
1 teaspoon Salt
½ teaspoon each Ground ginger and cumin
3 cups Water
1 cup Lentils
2-1/2 cups Hot cooked white rice
Red-skinned apple, chopped
1/3 cup Chopped natural American pistachios
Condiments: Plain yogurt, chutney, and chopped pistachios


Sauté onion, carrot and celery in oil until tender. Add curry, salt, ginger and cumin; sauté 1 minute longer. Add water and lentils; bring to boil and simmer 45 minutes or until lentils are very tender. Combine rice, apple and pistachios. Spoon lentils into individual serving dishes; top with rice mixture and condiments.
